Beginning of last year, I embarked on this project that I created for myself &#8211;\u00a0<em>I ask myself, why do I create more work for myself?<\/em>\u00a0I wanted to work on iconic Korean recipes and wanted to explore and experiment them. First project was all about Korean stews &#8216;Jjigae&#8217; and I have shared all 4 stews here including this one, <span style=\"color: #bd946c;\">Soft Tofu Stew<\/span> (Soondubu Jjigae), <a href=\"https:\/\/selinaslee.com\/kimchi-jjigae\/\" target=\"_blank\"><span style=\"color: #bd946c;\">Kimchi Jjigae<\/span><\/a>, <a href=\"https:\/\/selinaslee.com\/thin-beef-brisket-soy-bean-stew\/\" target=\"_blank\"><span style=\"color: #bd946c;\">Soy Bean Stew<\/span><\/a> (Ddenjang Jjigae), <a href=\"https:\/\/selinaslee.com\/camping-style-gochujang-jjigae-stew\/\" target=\"_blank\"><span style=\"color: #bd946c;\">Gochujang Jjigae<\/span><\/a>. Recipes are still not perfect but I think they are good guidelines. I&#8217;m sharing few notes and tips that I&#8217;ve learned by trial and error. Hope you get to try them and enjoy them for the remaining\u00a0cold and rainy season. Now\u00a0onto my next 4 pillars project, SOUPS! Stay tuned.<\/p>\n<p><strong>Soft Tofu Stew \u2018Soondubu Jjigae\u2019 (\uc21c\ub450\ubd80 \ucc0c\uac1c)<\/strong> &#8211; 4 Servings<\/p>\n<p>INGREDIENT<br \/>\n1\u00bd tubes soft tofu or 1 box silken tofu<br \/>\n\u00bc cup chopped thin beef brisket (\ucc28\ub3cc\ubc15\uc774)<br \/>\n\u00bc cup diced bella mushrooms<br \/>\n1 scallion<br \/>\n1 green chili pepper (\ud48b\uace0\ucd94)<br \/>\n\u00be cup water or stock<br \/>\n1 egg &#8211; <em>optional<\/em><\/p>\n<p>SEASONING FOR TOFU<br \/>\n1\u00bd tbsp <a href=\"https:\/\/selinaslee.com\/adding-depth-flavor\/\" target=\"_blank\"><span style=\"color: #bd946c;\">shim\u2019s sweet sauce<\/span><\/a><br \/>\n\u00bd tbsp soy sauce for soup<br \/>\nsalt<\/p>\n<p>SEASONING FOR STEW<br \/>\n2 tbsp gochugaru<br \/>\n2 tbsp soy sauce for soup (\uad6d\uac04\uc7a5)<br \/>\n1 tbsp shim\u2019s sweet sauce<br \/>\n2 tbsp water<\/p>\n<p style=\"text-align: justify;\">PREPARATION<br \/>\nMake a small slit on the middle of tofu tube to cut in half and take it out of the package. This will retain the shape. If you prefer cottage cheese like texture, you can make a small slit on the top of the package and squeeze out the tofu. Marinate the tofu with shim\u2019s sweet sauce, soy sauce and pinch of salt. This will also help extract some liquid out of the tofu. Chop and dice beef brisket and bella mushrooms. Chop scallions and prepare seeded chopped green chili peppers. These Korean green peppers are not as spicy so you can use them more for your liking.<\/p>\n<p style=\"text-align: justify;\">COOKING INSTRUCTION<br \/>\n1. In a medium size pot (I use clay pot), add gochugaru, water, shim\u2019s sweet sauce and soy sauce and mix them off heat.<br \/>\n2. Over heat, cook both beef and mushrooms in the seasoning until beef is cooked through. Add \u00be cup water or any type of stock (beef, vegetable) and boil it for few minutes.\u00a0NOTE: water level should be low as tofu will add more liquid to the stew.<br \/>\n3. Drain\u00a0tofu and add it to step 2 to boil it on high heat for about 5 min. Add chopped scallions and chili peppers and boil in lower heat for additional 2-3 min. If needed, season with soy sauce to taste. Take it off the heat.
