Spicy Cold Noodles with Vinaigrette Coleslaw

SPICY COLD NOODLES WITH VINAIGRETTE COLESLAW (비빔국수와 콜슬로) – 2 servings

INGREDIENTS
2 pks, bundles (servings) of ramen, wheat or jjeolmyeon (chewy) noodles
2 soft-boiled egg (7 min)
for coleslaw:
1/2 thinly sliced red onion
1 cup of shredded cabbage
2 jalapeños seeded, cut in half and sliced
1/4 cup chopped parsley
for vinaigrette:
1 tbsp dijon mustard
3 tbsp red wine vinegar
2 tbsp extra virgin olive oil

SAUCE
1 tbsp gochujang
1 tbsp sugar
2 tsp sesame oil
1 tsp ground toasted sesame seeds

PREPARATION
Make the vinaigrette first by mixing dijon mustard, red wine vinegar and evoo. Prepare coleslaw by thinly slicing red onion, jalapeños and parsley. NOTE: soaking red onion, jalapeños in cold water help take the heat off a bit. I also used packaged shredded cabbage to save some time. Make sauce for the noodles by mixing gochujang, sugar and sesame oil/seeds, you can use little bit of water to thin it out if it’s not mixing well. While you are doing this, boil eggs, 7 mins for perfectly soft-boiled eggs.

INSTRUCTION
1. Cook noodles in boiling water according to instructions per type of noodle, wash in cold water by rubbing hard against each other (like you’re doing laundry by hand). This will help take some starch out from the noodle and make the noodle extra chewy and springy. Drain and drizzle some sesame oil and set it aside.
2. Mix in the gochujang sauce with the cooked noodle by hand.
3. Top it with coleslaw and egg.

Hopscotch Your Way to Adulthood! – Birthday Cards {Printables}

Last year, we invited few of n8’s friends over to celebrate his 8th birthday. I didn’t have a big theme party planned for him but thought of this hopscotch idea to use for his invite. I got the idea from watching him playing hopscotch at his school playground. I remember playing this as a child and love this idea of making birthday cards for his friends. I’m sure you have asked your child to draw something really quick or make a personal card before heading over to their friend’s birthday party. I do that all the time and it’s usually very last minute. So I have made these hopscotch invitation to printable birthday cards for you to download and print. You can even make it a fun project to do with your child. Enjoy!

MATERIALS
White Adhesive Labels (full size)
Neon or Color Papers (65lb card stock)
Color Printer (Inkjet shown)
Scissors
Tacky Glue or Double Sided Tape
A2 Size Envelope
INSTRUCTIONS
1. Print hopscotch birthday card (2UP) pdf from link above on adhesive white label (full size 8.5″ x 11″). I usually buy this adhesive paper from the paper company like Kelly’s paper but you can buy smaller bulk size at any office supply store. One that will work for your printer will be great. I used the ink-jet compatible ones.

2. Before you cut out the birthday card design into A2 (4.25″ x 5.5″) size cards, stick the design on color card stock paper by peeling full size printed adhesive label. Here I used neon color paper for the pop! of color but you can use any color paper. Just make sure to use not too thick (like 80 lbs card stock) as it may not go through your ink-jet printer. I used 65lb cover stock in neon colors. I picked up a small ream from the Target store.
3. Cut the design into A2 card size, you will get two cards out of this printables. I used xacto knife and metal ruler but you can use scissors to cut around the edges. 
4. Print stick-on printables (3UP) on 65 lb color card stock paper and cut out the pieces with scissors. You can save the extra ones for future use. 
5. Glue or stick on the right number (birthday age) for your friend’s birthday card. You can use durable glue like tacky glue or double sided tape.
